Amaranth ricotta pie

The recipe used below is adapted from Moosewood cookbook.

Ingredients

The main ingredient is 3 cups of wild amaranth greens, cooked and drained thoroughly. The 3 cups cooked amaranth is from cooking 1 gallon fresh wild amaranth. The other main ingredients are 16 oz ricotta cheese and 1 cup unbleached flour. Other ingredients are:
3 beaten eggs
3 Tbsp flour
1 ½ cups grated sharp cheese (8 oz)
1 tsp butter
1/3 cup butter
2- 3 Tbsp cold water
1 cup minced wild leeks or onions
Dash of pepper
½ tsp salt

Preparation

1.) The pie crust is prepared on a 9 to 10 inch pan and set aside.
2.) The oven is then pre heated to 375 degrees.
3.) Subsequently the leeks or onions are sautéed in butter and then combined with wild amaranth, salt and pepper in a bowl.
4.) The eggs, ricotta, flour and ½ of the grated cheese are beaten together in a separate bowl and added to the wild amaranth and mixed thoroughly.
5.) The result of procedure 4 is spread into the unbaked pie shell
6.) The pie shell is then sprinkled with remaining cheese.
7.) Finally bake at 40 degrees for 45 minutes or until firm to touch at center.

Wild amaranth quiche

Ingredients

Ingredients for making the pie crust are:
1 cup flour
1/3 cup butter or shortening
2-3 Tbsp cold water
½ tsp of salt

Ingredients for filling are:
a. 4 cups wild amaranth leaves, chopped
b. 2 cups (8 oz) Swiss cheese, grated
c. 3 eggs
d. 1 ½ cups milk
e. 2 Tbsp butter
f. 1 Tbsp flour
g. ¼ onion, chopped
h. ½ tsp salt

Preparation of the pie shell
1.) The flour, butter and salt are placed in a food processor.
2.) Then turn the food processor medium to high, until a coarse, crumby mixture is formed.
3.) To the mixture add 1 Tbsp of cold water at a time and blend until a lump is formed. Make sure not to add too much water.
4.) Roll out as any pie crust.
Remember: It’s quick and easy making the pie shells in the food processor in addition a fine and flaky crust is usually produced.

Filling the pie shell
1.) The pie shell is pre baked in the oven at 350 degrees for 5 to 10 minutes until lightly browned.
2.) Then the wild amaranth and onion are sautéed in butter until tender. Ensure not to overcook.
3.) Then add flour and salt and mix together.
4.) Whip together eggs and milk in a separate bowl or blender.
5.) Then the egg mixture is added to the amaranth.
6.) The grated Swiss cheese is then spread over the bottom of the pie crust.
7.) Pour filling over the top of the cheese.
8.) Finally bake at 325 degrees for 45 minutes. Remove from oven and let it set for a few minutes before cutting.
Serve hot or cold

Wild amaranth spanokopita

Ingredients

The main ingredient is 4 cups cooked wild amaranth. Other ingredients are:
1 box of filo leaves
112- Oz can of black olives that have been sliced
1 Tbsp olive oil
½ to 1 cup of olive oil
1 lb. feta cheese
1 bulb garlic
1 tsp garlic powder
Pinch of salt

Preparations

1.) The amaranth greens are prepared to have 4 cups cooked of amaranth greens.
2.) The wild amaranth greens are mixed with olives, feta cheese, garlic powder, chopped garlic, olive oil and salt

Filling

3.) The filo box has instructions for preparing and folding pastries properly, follow these instructions. First cut filo leaves in half lengthwise then put ¼ cup filling in each pastry. Use 3 sheets filo per pastry.
4.) Finally, arrange on an ungreased cookie sheets and bake at 350 degrees for 30 minutes.
Make approximately 30 pastries.

Wild amaranth whole meals

Wild amaranth lasagna

Lasagna noodles and the right amount of cooked wild amaranth guarantee for a delicious treat courtesy of the much effort required to prepare this mix.

Ingredients

The main ingredient is 4 cups of cooked wild amaranth, which is obtained from cooking 1 gallon fresh of amaranth. Another main ingredient is 12 lasagna noodles. Other ingredients are:
115- Oz tub ricotta cheese
1 lb mozzarella cheese, shredded
3 cups milk
2 small eggs or 1 large one
1/3 cup butter
1/3 cup flour
½ cup minced parsley (preferably minced in a food processor, if there is one)
½ minced onion
1 tsp salt

Preparations

1.) The lasagna noodles are cooked in boiling water until soft. The water is then drained and the noodles cooled under cold water.
2.) Then blanch wild amaranth leaves for 5 minutes in boiling water and then drain the water.
3.) Shred the mozzarella cheese and set aside.
4.) The ricotta filling is prepared in another bowl and set aside.
5.) Wild amaranth filling is made by melting butter at medium heat in a large heavy-bottomed pan. In this melting butter onion is sautéed briefly. Then flour is added to the sautéed onions and stirred until smooth. Subsequently milk and salt are added and stirring done until smooth. Finally the wild amaranth is added. Cook at medium heat these mixtures, stirring continuously until nice and thick.
6.) 1/2 cup of wild amaranth filling is placed in the bottom of a deep 9x13 pan and spread evenly.
7.) Then 3 lasagna noodles are put side by side in the bottom of the pan.
8.) Subsequently to these noodles spread 1/3 ricotta filling, then 1/3 wild amaranth filling and finally 1/3 mozzarella cheese.
9.) Repeat layers twice more, saving ½ cup mozzarella and ½ cup wild amaranth filling for the top.
10.) Finally spread filling and sprinkle cheese over the top of the noodles. Cover with a foil and bake at 350 degrees for 45 minutes.
Remember: This recipe goes well with wild amaranth, nettles or lambs quarters.

Wild amaranth hamburger helper

5.) Milk and salt are subsequently added and stirred, cooking until it just starts to thicken.
6.) Add 4 cups pre-cooked wild amaranth greens and keep stirring and cooking until it forms thick gravy.
7.) Finally add hamburger and pasta and stir everything together.
Serve hot

Ingredients

The main ingredient is ½ cup amaranth broth or tonic infusion. Other ingredients are:
1 Tbsp vinegar (use your herbal vinegar) or lemon

Dash Tabasco sauce
Pinch of pepper
Pinch of salt
