Its wonderful cooking using Acorn, from its delicious baked products to its often steamed ,often barbequed or sometimes simply fried products, foods cooked using acorn will stimulate ones taste buds.

There are a myriad of acorn foods you can prepare. From the sumptuous acorn breads, to cookies, pancakes, meatloaf's, burgers and all acorn products, cooking using acorn is an opportunity to produce sumptuous meals. One can enjoy backed acorn products, like the traditional acorn brown bread, acorn pancakes, cookies, muffins and many others. Still there are lots of acorn whole meals from acorn hot dish, acorn burgers, acorn meatloaf and Chili con acorn.

Acorns delicious backed products

Starting from the ancient we have the acorn brown bread, an unmistakable favorite for many who belong to the olden days, and a sumptuous treat to anyone who can dare taste it. This bread unlike other breads is steamed and not baked. As a result of steaming this bread is usually moist and very delicious. This bread is prepared by steaming it in cans for two hours.

Acorn brown bread

What you need to prepare it

One of course needs some clean and empty 16-oz cans. What goes into these can is a mixture of all ingredients which are;

1 cup Acorn flour

2 cups whole wheat flour

2 cups butter milk

1 tsp salt

2 tsp baking soda

¾ cup molasses

1 cup chopped raisins

Once all ingredients have been mixed together to form a batter and placed in the tin cans all is set for the beginning of the steaming. However it should be remembered that these cans are to be clean and should be greased inside with cooking oil. The batter should not fill the cans, but it should reach ¾ full of the cans and also the cans must be sealed tightly with aluminum foils fastened with rubber bands.

Going about with the steaming

The cans should be placed in a canning rack in your canner and some inches of water placed at the bottom. The lids should subsequently be put in the canner and the canners to be left to steam for two hours.

Occasionally the water levels should be checked and if they have dropped the water is to be replenished. The cans should have cooked completely before the loaves of bread are removed. Finally slice the bread and serve it.

Acorn ginger bread

The good thing about this bread is that it contains Molasses. It's assured that the combination of molasses and acorn is such a delicious treat you will always be longing for. This bread is prepared by baking and it takes a paltry 40 minutes to prepare.

Ingredients

Key ingredients needed are 1 ¼ cups of acorn flour and 1 ¼ cups of wheat flour. Other ingredients needed are 1 cup of molasses 2 eggs 2 tsp baking soda ½ tsp salt 1 tsp cinnamon 1 tsp ginger ½ tsp cloves ½ cup of sugar 1 cup boiling water

Preparation

1.) All the dry ingredients are added together in one bowl. While the eggs, sugar, molasses and oil are added together in a separate bowl. 2.) The two bowls are then mixed together, boiling water added and the mixture stirred until smooth . 3.) Baking is then done at 350 degrees for 40 minutes.

To enjoy the full treat serve Acorn gingerbread warm with fresh whipped cream on top.

Acorn "Corn" bread

The primary ingredients in preparing this bread are 1 cup of acorn flour and 1 cup of white flour. Other ingredients are:

2 large eggs 1 cup of milk, most preferably butter milk if it can be found ½ cup of honey ¼ cup of oil or butter 2 tsp baking powder ¾ tsp baking soda 1 tsp salt

Preparations

1.) All the dry ingredients should be mixed together 2.) The rest of the ingredients should be subsequently added and the mixture blended until it becomes smooth. 3.) The batter produced from the blending should be poured into a 9x9 baking pan or 10-inch cast iron frying pan. 4.) The baking should subsequently be done at 375 degrees and should take 25 minutes. Ideally serve the baked acorn bread with plenty of butter. Some honey or maple syrup on top of it will also make it great.

Acorn Molasses Cookies

Molasses is what transforms every cookie into a mine of great delicious flavors. In this case molasses and spices are used and what is produced is a greatly tasting cookie. In fact someone who has never tasted acorn will not recognize there is acorn in this cookie for its taste is dominated by that of molasses and species.

Ingredients

As usual you need 1 ¼ cups of acorn flour and 1 ¼ cups of white or wheat flour. Other Key ingredients are ¾ cups of brown sugar and ¾ cup butter.

Other ingredients are:

1 large egg ¾ cup of molasses 1 tsp baking soda ½ tsp salt 1 ½ tsp ginger 1 tsp cinnamon 1 tsp nutmeg ½ tsp allspice

Preparations

1.) The brown sugar and the butter should be creamed together. 2.) Molasses and eggs should then be added and mixed thoroughly. 3.) White Flour, Acorn flour, baking soda, salt and spices should be mixed together in a separate bowl. 4.) The dry ingredients should subsequently be added to wet ingredients and mixed thoroughly. The batter produced should be soft rather than stiff. It should also not be runny. 5.) Rounded spoonfuls of the batter should be dropped on to a cookie sheet. Once in the sheet, flatten the batters with your palm and sprinkle them with sugar crystals. 6.) Finally they should be baked at 325 for 8-10 minutes. Look out not to over- bake them as the bottoms burn easily.

These cookies can be made superbly creamy and delicious by being creamed by 1 package of softened cream cheese and 3 tablespoons of maple syrup. The bottom side of the cookie can also be frost and another cookie stacked, creating a scrumptious, mouth watering sandwich. Acorn Muffins with wild apples and Hickory nuts

This is a lip smacking, mouth watering acorn product, free from any dairy product. It features treats from the wild, including wild apples and hickory nuts.

Ingredients

Primary Ingredients are 1 ½ cups of acorn flour and 1 ½ cups of white or wheat flour. Other Key ingredients are 2 ½ cups of grated wild apple that have been peeled and cored and ¾ cup of walnuts or hickory nuts.

Other ingredients are:

2 cups of raisins 3 Tbsp of oil 1 cup + 2 Tbsp maple syrup or honey 1 ½ tsp cinnamon 1 ½ tsp of allspice ½ tsp of cloves 1 ½ tsp salt 1 ½ tsp baking soda 1 ½ cups of boiling water

Preparation

1.) Boiling water is poured over the grated wild apples and raisins; the mixture is then topped with oil and let to stand for 10 minutes. 2.) Honey and spices are then added and subsequent mixture allowed to cool. 3.) The dry ingredients should be sifted together and walnuts added and these should be combined with the rest of the wet ingredients. 4.) Spoon into the well- greased muffin pan. 5.) Baking is done at 350 for 15- 20 minutes.

Whole Acorn meals

To be sampled here include acorn hot dish, acorn burgers, chili con acorn and acorn meatloaf. Just like the baked acorn products, these are also delicious and are precisely a nice treat.

Chili Con acorn

These chili treat is also a favorite of one Sam Thayer from Wisconsin. Every year at the Midwest wild harvest festival in Wisconsin, Sam Thayer serves a scrumptious Chili Con Acorn.

Ingredients

4 cups of rehydrated acorns 1 large chopped onion 2 cloves of minced garlic 1 Tbsp chili powder ½ tsp salt 1 tsp ground cumin 1 tsp oregano ½ tsp Tabasco sauce 1 can (16 oz) chopped tomatoes 1 cans (16 oz) kidney beans

Preparation

1.) The acorns with onion and garlic are sauted in a heavy- bottomed pot. 2.) The remaining ingredients are then stirred in 3.) The subsequent mixture is heated to boiling and then the heat is reduced and the food simmered for at least an hour.

Simmering can be done well with a crock pot. This allows one to give the food a long simmer without fearing that the food will be scotched.

Acorn Hot dish

Ingredients

Main ingredient here is 4 cups of Acorns, the other ingredients are: 1 small onion, chopped ½ tsp thyme 1 tsp salt ½ tsp pepper 2 cups soft breadcrumbs (4 slices of bread) 2 eggs ¼ cup sesame seeds ¼ cup of oats 3 cups cubed cheese (1 lb)

Preparation

1.) The Acorns must be boiled in water until they are soft. For frozen acorns this step is not done. 2.) The acorns are then mashed with a potato masher. 3.) These mashed acorns are then combined with remaining ingredients. 4.) A little water should be added if the subsequent mixture is dry. 5.) It's then spread into a greased 9x9 square pan or 9x5 loaf pan 6.) Sesame seeds and oats should then be sprinkled on top. 7.) Bake for 45 minutes at 350.

Acorn burgers

This recipe for making acorn burger is the recipe used for making soy milk and tofu from leftover soy bean pulp.

Ingredients

The main ingredient is 5 cups of rehydrated acorn meats. The other ingredients are: 1 cup of oats or one cup of flour 2 tsp salt ½ tsp pepper 1 Tbsp garlic powder 2 tsp oregano 1 tsp basil 1 finely chopped onion

Preparation

1.) The acorns are mashed with a potato masher.

2.) All the ingredients are then mixed together; the batter produced should be stiff.

3.) The batter is rolled into a ball about the size of an apricot and flattened to about ½ inch thick to make patties.

4.) The patties are then fried in much oil to make them crispy.

They should be served on bread with all the fixings, just like a hamburger or a veggie burger. Acorn "Meat" Loaf

Incase you are using dried acorn meats; rehydrate them by simmering them in water until they are soft, before mixing the ingredients.

Ingredients

The main ingredient is 4 cups of acorns that have been chopped or mashed. Other ingredients are: 1 cup of milk 3 slices of bread, torn into small pieces or ¾ cup of oats or ½ cup dry breadcrumbs 1 egg 1 tsp dried sage leaves 1 tsp salt ½ tsp dry mustard ¼ tsp pepper 1 clove of garlic, minced 1 small onion, chopped 1 Tbsp Worcestershire sauce ½ cup barbecue sauce

Preparation

1.) All ingredients are to be mixed together except barbecue sauce. 2.) The mixture is then shaped into a loaf pan 3.) Then spoon barbecue the sauce over the top. 4.) Bake at 350 for about an hour.
