Amazing Burdock Root Meals and Tastes
Burdock root is a great root plant that can transform every meal into an unforgettable experience, yet at same time providing great healing to the body system.
Burdock roots can be combined with various other ingredients to create an exciting feast like no other. There are a myriad of ways you can create a Burdock experience: you can opt for the wild burdock pilaf and Burdock wild rice, or still one can simply make the Restoration root tea with burdock. Burdock and wild rice
IngredientsThe main ingredients here are 2 cups sliced Burdock root, these is about 4- 5 medium sized roots. Another main ingredient is 1 cup of wild rice which is uncooked; this will produce around 4 cups of rice when cooked. Other ingredients are:
5 to 6 wild leaks, this can substitute 6-8 cloves garlic
2 Tbsp olive oil
Thai peanut sauce
This peanut sauce can be found at local co-operative or ethnic food section of grocery store.
Preparation1)The fresh burdock roots are washed and sliced and then covered in 2 cups of water and ½ tsp baking soda.
2)This mixture is then boiled and water subsequently poured out.
3)Fresh water is then added and boiled gently for 10 minutes until the burdock becomes tender.
4)The water is then also drained thoroughly and the burdock put in a skillet.
Remember: cast iron may discolor the burdock.
5)Add chopped leeks or garlic to the burdock and sauté in 2 Tbsp olive oil for 5 to 10 minutes.
6)As the sautéing goes on, wild rice is cooked separately in 2 cups of water for 20- 30 minutes.
7)The sauted burdock is mixed with the cooked rice.
8)Finally add ½ cup Thai peanut sauce and serve hot or cold.
Remember: The Thai peanut sauce can be substituted with any favorite stir-fry sauce.
Wild Burdock Pilaf
If you are an earnest forager, make sure to pick any edibles in your foraging including greens, mushroom, nuts or roots and include them in the preparation of this pilaf. This is the great thing about this particular pilaf: You can add any odds and ends you pick in your foraging.
IngredientsThe main ingredient is 1 cup of wild rice that is dry and 2 cups of sliced burdock root. Other ingredients are;
6 wild Leeks or 1 large onion
2 cups wild greens, chopped, this may be dandelion, chickweed, yellow dock and others. Any combination will work.
3 cups of water
2 Tbsp olive oil
1 cup hickory nuts or black Walnuts
¾ tsp salt
Preparation1)Chop the wild leeks then sauté them in butter until tender.
2)Then add wild rice and Burdock root and stir so that they coat with butter or oil.
3)Add water, salt and chopped greens.
4)Bring the entire mixture to boil and cook for 45 minutes or until they would have been done.
5)Mix in the nuts gently.
6)Transfer the rice after it has finished boiling to a 9x13 baking pan and bake at 350 degrees for 5 to 10 minutes to give the pilaf a drier texture.
Remember: Step 6 is optional.
7)Serve with butter or gravy.
Amazing Burdock Restoration tea and other Burdock meals
Restoration root teaThis tea will help one to relive stress and fatigue. It is also good for detoxification, it cleanse the blood from unwanted substances. It can be taken several times in a day.
Ingredients1 cup dried Burdock root
1 cup dried Astragalus root
¼ cup dried ginger root
¼ cup Ginseng root
Preparation1.) The dried roots are mixed together and stored in a glass jar.
2.) Take ½ cup of water to 1 quart of water to make tea.
3.) The roots are then simmered gently in water for 20- 30 minutes.
4.) Add 2 Tbsp of honey if you like.
5.) The roots and all are then poured into a quart jar and let to sit for several hours or overnight.
6.) Store in refrigerator for up to 3 days.
This tea can be taken hot or cold, 1-2 cups per day.
Venison Roast with wild roots and onions
IngredientsThe main ingredient here is 1 ½ or 2 lb Venison roast. Other ingredients are;
2 cups Burdock root
15 wild carrot roots (Queen Anne’s lace)
2 cups Jerusalem artichoke roots
4 or 5 medium onions, quartered
Salt and Pepper
Preparations1)The Venison’s are placed in a pan and sprinkled with salt and pepper. 2 cups of water is then added.
2)Pile chopped onions and prepared wild roots around the roast.
3)Then Bake covered at 375 degrees for 1 ½ hours.
4)With a meat thermometer check roast, it will be ready to slice and serve at 160 degrees.
5)Save liquid in roasting pan for making gravy.
Burdock carrot slaw
IngredientsThe main ingredients you need here is 1 cup Burdock root, sliced thinly on the diagonal and ½ cup carrot sliced like the Burdock root. Other ingredients:
2 Tbsp green onion, minced
1 tsp. sesame seeds, lightly toasted
4 tsp soy sauce
2 tsp sesame oil
1 tsp balsamic or herbal infused vinegar
2 Tbsp honey or maple syrup
Preparations1)The chopped Burdock, carrot and onion are mixed together.
2)The remaining ingredients are blended together in a separate bowl to make a marinade.
3)Toss marinade together with chopped vegetables.
4)Chill for 4 hours or longer.
Braised Burdock root
IngredientsThe main ingredient is Burdock root, sliced thinly on the diagonal. Other ingredients are:
1 small onion or 3 wild Leeks
½ cup water or stock
2 Tbsp miso or boullion
1 Tbsp honey
1 Tbsp soy sauce or Bragg’s liquid Aminos
¼ cup vinegar
1 Tbsp olive oil
Preparation1)Burdock and the wild leeks are sauted in the olive oil.
2)Remaining ingredients are added and simmered when covered, until Burdock is tender.
3)Uncover and continue to simmer until the liquid has evaporated.
