IngredientsThe main ingredients are 1 ½ cups of watercress, 4 oz feta cheeses and 8 oz cream cheese. Other ingredients are:
2-3 cloves of garlic
½ tsp coarse ground pepper
1-2 tsp milk to soften as needed
Preparations1)All of the above ingredients are placed in a food processor. They are then chopped at high speed until smooth, green and creamy.
2)Milk is only added if necessary to soften it to a nice sandwich spread consistently.
Watercress Egg- salad sandwich spread
IngredientsThe main ingredients are ½ cup watercress, chopped finely and 2 hardboiled eggs. The other ingredients are:
2 Tbsp chives or minced onion
2 Tbsp mayonnaise
Salt and pepper
Preparation1)The hardboiled eggs are mashed with a fork and mixed with watercress and chives.
2)Moisten with mayonnaise then season gently with salt and pepper.
Optional: One can add a teaspoon of horseradish to make this spread extra wonderful
Soup
The watercress potato soup is a great way to enjoy soup. This soup features some garlic, some watercress, potatoes and a bit of some butter and some onion.

IngredientsThe main ingredients are 4 cups watercress and 8 medium potatoes that have been peeled and diced into bite-sized pieces. Other ingredients are:
10-12 cloves garlic, minced
1 medium large onion
1 Tbsp butter
1 cup milk or cream
5 cups water or stock
¼ tsp pepper
2 tsp salt
Preparation1)The onion and the garlic are sauted in butter.
2)Diced potatoes and 5 cups water or stock are then added.
3)Potatoes are cooked until soft and let to cool.
4)½ of the potatoes and broth are put into a food processor or blender and blended until smooth.
5)Add puree back to pot with the rest of the potatoes and water then turn low heat.
6)Watercress, salt and pepper are then added.
7)Simmer gently until watercress is tender.
8)Add milk or cream and serve.
Remember: This soup scorches easily so hover over it and stir often. Using a Crockpot for stages 6 to 8, will make the soup not to scorch, and you can be doing other things while the soup simmers. This soup will disappear quickly!
Salad and Salad Dressing

2 cups grated carrot
1 hardboiled egg
1 avocado, diced

IngredientsThe main ingredient is 1 cup of watercress, which can be substituted with chickweed or other tender grass. Other ingredients are:
½ cup yogurt
½ cup olive oil
1 Tbsp lemon juice or vinegar
1 tsp honey
Dash of pepper
1 garlic clove
¼ tsp salt
Preparations1)Blend all ingredients except yogurt thoroughly in a food processor or blender.
2)Add yogurt and blend gently until smooth.
