Soups play a vital part in any meal and is very important to include as they not only increase the appetite but also boost up the body.
Wild Sorrel-Potato Soup
The main components required to prepare the wild sorrel- potato soup are as follows:
Butter-2 tablespoons
Water-3 ½ cups
Roughly chopped yellow dock leaves-4 cups
Crushed wild onions or leeks-1cup
Salt-1 tsp
2 quartered and slimly-sliced potatoes
A pinch of black pepper
Sour cream-1 cup
Crushed chives-1 tbsp (to garnish)
Below are the steps required to be followed for the preparation of rich wild sorrel-potato soup:
1. First of all, butter should be melted in a soup pan with about half a cup of water.
2. To this, yellow dock and wild leeks should be added with salt and left to simmer for around 5 minutes. It should be kept in mind that the pan should be covered and the mixture should be boiled over medium and low heat.
3. After the mixture has been boiled, thin slices of potatoes should be added and this should be cooked and stirred occasionally for another 10 minutes.
4. Another 3 cups of water should be poured in and then the whole mixture should be left to boil. After the contents start to boil, heat should be lowered and the mixture should again be allowed to simmer until the thin slices of potatoes become tender. This procedure takes around 30 minutes.
5. The basic soup is now ready and more salt should be added, if it is required.
6. The sour cream should be stirred in just at the time of serving.
7. Garnish the soup with crushed chives and a grinded black pepper.
Yellow Dock Frittata
Yellow dock frittata is a nice breakfast dish which can be prepared with the help of any wild greens but yellow dock is generally used as it imparts a delicious lemony flavor to the dish. Below is the list of ingredients used to prepare yellow dock Frittata:
Finely cooked and nicely-drained leaves of yellow dock- 1 cup
Six eggs
Cream- 2 tbsp
Salt- 1/2 a tsp and a pinch of pepper
One potato
Finely crushed onion- 1/4 a cup
Butter- about 2 tbsp
Grilled cheese- 1 cup
Following are the steps required to prepare a delicious yellow dock frittata:
1. First of all, the potato should be peeled and finely chopped.
2. Next, finely chopped pieces of onion should be fried in butter until they appear soft in a broiler-resistant skillet of 10 inches(cast iron would be perfect)
3. After this, the finely chopped cut slices of potato should be added and fried for approximately 5 minutes.
4. Cream, whisked eggs, pepper and salt should be mixed together thoroughly in a bowl.
5. Now, yellow dock leaves should be added to the mixture.
6. The broiler should be preheated on an oven.
7. This is to be followed by addition of egg mixture containing yellow dock leaves to onions and potatoes.
8. The above mixture should now be cooked on low-medium heat for around 10 minutes until the base of frittata is set but the top is fluid even now.
9. Now the skillet should again be put in the broiler and the contents should again be cooked for around 5 minutes so that the top part of the dish also sets. It should be noted though, that this should not turn dark brown.
10. The top should be covered with cheese and put back in the broiler for just enough amount of time that it melts the whole cheese.
